I went grocery shopping yesterday and couldn’t find sauerkraut. I looked in the vegetable isle but it was nowhere to be found, so I asked the clerk, “I couldn’t find the sauerkraut, would you please help me find it?”
As we’re walking in the vegetable isle I said, “Did you know that sauerkraut is the healthiest food we can eat to nourish our bodies?” The clerk says, “I don’t know if I can stomach the taste of sauerkraut. I told him you have to find recipes for sauerkraut. It’s worth the effort because it is extremely beneficial for gut health.”
Sauerkraut is finely cut, fermented white cabbage, rich in probiotics, fiber, and vitamins C and K that promote gut health and immunity. Here is how to make it. Shred cabbage, mix with sea salt (1-2 tbsp. per 2 lbs.), massage to release liquid, pack into a jar, keep submerged under its own brine, and ferment 5-7 days at room temperature.
